Kate calls this dish Caroline's Carrot Casserole (Caroline is Karen's mom).  Karen
calls it Skip's Mom's Carrot Soufflé (Skip's Mom is Karen's cousin's husband's
mother).  Either way, it's all in the family, and always delicious!

Skip's Mom's Carrot Soufflé

1 pound carrots - cooked and mashed
3/4 cup sugar
1 cup milk
3 eggs
1/4 cup butter softened
1 tablespoon flour
1/2 teaspoon cinnamon

Blend together until smooth.  Bake at 350 for 40 min.
